Skillet Chicken in Garlic Tomato Sauce


A delicious dinner that can be ready in under 30 minutes is my kind of meal. Every time a make a meal like this I think about creating a category in my recipe index just for meals under 30 minutes. But then I realize how much work that would be and decided against it.


The garlic tomato sauce is so good that my husband used a piece of bread the clean all of the sauce out of his bowl. That's how I know this dish is a winner, plus both of my girls cleaned their plates.

Skillet Chicken in Garlic Tomato Sauce

Ingredients:

  • 2 pounds boneless skinless chicken breasts
  • black pepper, to taste
  • 3 tablespoons olive oil
  • 2 tablespoons minced garlic
  • 28 ounces crushed tomatoes
  • 2 teaspoons dried basil
  • pinch cayenne pepper
  • 1/3 cup unsalted butter
  • 2 tablespoons grated parmesan cheese
  • cooked pasta

Directions:

  1. ​Season both sides of the chicken breast with black pepper.
  2. In a large skillet, over medium-high heat, heat the olive oil. Add in the chicken and cook for about 5 minutes per side or until both sides are golden brown and completely cooked.
  3. Reduce the heat to low and remove the chicken to a plate and set aside.
  4. Add the garlic to the skillet and cook for 1 minute, stirring constantly. Stir in the crushed tomatoes, basil and cayenne pepper.
  5. Slowly increase the heat just until the sauce comes to a simmer. Keep the sauce at a simmer, adjusting the heat as needed. Simmer for 5 minutes, stirring occasionally.
  6. Whisk in the butter until completely melted and incorporated. Stir in the parmesan cheese and return the chicken to the skillet. Let the chicken simmer in the sauce for 3 minutes.
  7. Serve the chicken and sauce over pasta and top with additional parmesan cheese, if desired.

Notes:
We tend to eat half a chicken breast since they are so big.
