These muffins don't have the classic muffin look. They are a little rugged looking and not necessarily the prettiest, but the taste definitely makes up for the look.
I was surprised by the taste of these muffins. I was hoping they would tase good, raspberries and white chocolate are such a delicious combination. However, with all of the oats in the muffins I knew it would not be the classic muffins taste. But then again I did not feel so bad eating 1 or 2 of these muffins a day because they had so many oats in them.
Raspberry Banana Oatmeal Muffins
Ingredients:
- 1/3 cup unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1 egg
- 1 tablespoon vanilla extract
- 2 ripe bananas, mashed
- 1 1/2 cups all purpose flour
- 1 cup old fashioned rolled oats
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 cup white chocolate chips
- 6 ounces fresh raspberries
Directions:
- Preheat the oven to 375º F. Spray a muffin tin very well with cooking spray.
- In a large bowl cream together the butter and sugar with an electric mixer, until the mixed is fluffy and well mixed.
- Add in the egg, vanilla and mashed bananas, beating until well mixed.
- Add in the flour, oatmeal, baking powder, baking soda and cinnamon, stirring with a spoon until well mixed.
- Gently fold in the white chocolate chips and then gently fold in the raspberries.
- Divide the batter evenly between the 12 muffin cups. not filling the cups more than 3/4 full.
- Bake for 15-22 minutes or until top bounces back when lightly touched.
- Remove the muffin tin from the oven and allow the muffins to cool in the pan for about 5 minutes before removing them and placing them on a cooling rack to cool completely.
