With everything going on in the world right now and with the weather still being crazy like it has been for the past 6 months or so, this comforting soup is just what I needed.
This soup is packed with goodness, which makes it a filling soup. It is so filling that you could serve it for dinner with a salad or some bread or even both.
Crock Pot Tuscan White Bean Soup with Sausage
Ingredients:
- 1/2 pound Italian sausage
- 2 yellow onions, diced
- 3 cloves garlic, minced
- 3 stalks celery, diced
- 1 cup peeled and sliced carrots
- 2 tablespoons tomato paste
- 2 tablespoons Italian seasoning
- 1/2 cup low sodium chicken broth
- 28 ounces low sodium chicken broth
- 14.5 ounce can fire roasted tomatoes
- 15 ounce can no salt added tomato sauce
- 1/2 cup roasted red peppers, diced
- 1 green pepper, diced
- 15 ounce can white beans, rinsed and drained
- 5 ounces kale
Directions:
- In a large skillet over medium heat, cook the sausage until crumbled and completely cooked. Transfer the sausage to the crock pot.
- To the same skillet, add in the onions, garlic, celery and carrots. Cook until they are softened, about 3 minutes.
- Stir in the tomato paste and Italian seasoning. Pour in the 1/2 cup of chicken broth, scraping up the browned bits from the bottom of the pan until the mixture comes to a boil. Transfer the mixture to the crock pot.
- To the crock pot, stir in the chicken broth, fire roasted tomatoes, tomato sauce, roasted red peppers and diced green pepper. Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Stir in the orzo, beans and kale. Cook on high for 15 minutes or until the pasta is done.
Notes:
I used hot Italian sausage.
