Crock Pot Queso Chicken Tacos: Savory Sweet and Satisfying

Whenever I make tacos I always use ground turkey, I have never been a huge fan of chicken tacos. However, when I came across this recipe I knew I needed to give it a try. So we had a taco night where we had ground turkey taco meat, this queso chicken with hard and soft tacos with plenty of toppings to choose from.

Now with regards to this queso chicken, oh my goodness is it amazingly delicious. I may have eaten a few forkfuls of this chicken plain, since it so good. It has such good flavor and made me decided to include this chicken with all of our taco nights.

Crock Pot Queso Chicken Tacos

Ingredients:

  • 2 pounds boneless skinless chicken breasts
  • 1 package taco seasoning
  • 10 ounce can diced Rotel tomatoes with lime juice
  • 4 ounce can diced green chilies
  • 1/2 cup low sodium chicken broth
  • 3/4 cup salsa con queso
  • taco shells or tortillas
  • favorite taco toppings

Directions:

  1. Place the chicken into the crock pot in a single layer.
  2. Sprinkle the chicken with the taco seasoning.
  3. Add in the tomatoes, chilies and chicken broth.
  4. Cover the crock pot and cook on low for 6-8 hours or high for 4-6 hours.
  5. Remove the chicken and shred.
  6. Remove most of the liquid from the crock pot leaving just a little bit.
  7. Return the chicken to the crock pot and stir together with the remaining liquid.
  8. Add in the salsa con queso and mix with the chicken.
  9. Cover the crock pot and cook on low for about 20 minutes or until heated through.
