These doughnuts were made totally and completely by my youngest daughter. For some reason she loves to make baked doughnuts and she is pretty good at it too. These doughnuts were delicious! Sweet and a little tart all rolled into one baked doughnut.
Baked Cherry Vanilla Doughnuts
Ingredients:
Cherry Vanilla Doughnuts
- 1 cup all purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 cup milk, warmed
- 4 tablespoons unsalted butter, melted and slightly cooled
- 2 teaspoons vanilla extract
- 1/2 teaspoon white vinegar
- 1 egg, room temperature
- 1 cup frozen tart cherries, cut into eight pieces
Glaze
- 1 1/2 cups powdered sugar
- 3 tablespoons unsalted butter, melted
- 2 teaspoons vanilla extract
- 1 tablespoon milk
Directions:
- Preheat the oven to 350º F. Grease two 6 cavity doughnut pans.
- In a medium bowl, whisk together the flour, sugar and baking powder.
- In a small bowl whisk together the warmed milk and butter. Whisk in the vanilla extract and vinegar. Whisk in the egg.
- Add the milk mixture to the dry ingredients and stir just until everything in incorporated. Fold in the cherries.
- Spoon or pipe the batter into the prepared doughnuts pans.
- Bake for 12-14 minutes or until an inserted toothpick comes out clean.
- Remove the pans from the oven and let the doughnuts cool for 1 minute in the pans.
- Remove the doughnuts from the pans and transfer to a cooling rack to cool completely.
- In a small bowl, whisk together all of the glaze ingredients. Allow the glaze to sit for 1-2 minutes before dipping the tops of the cooled doughnuts into the glaze.
