Marshmallow Toffee Cookies

Marshmallow Toffee Cookies: Savory Sweet and Satisfying

Wow, these cookies are yummy. The combination of chocolate, toffee and marshmallows make this cookie hard to resist.

I decided to make these cookies to use up some marshmallows I had in the pantry, but it also helped me to use up some chocolate chips and toffee bits. These cookies were meant to be since I had the exact amount of chocolate chips, toffee bits and mini marshmallows.

Marshmallow Toffee Cookies

Ingredients:

  • 1 cup unsalted butter, room temperature
  • 3/4 cup packed brown sugar
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 egg yolk
  • 2 teaspoons vanilla extract
  • 3 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3/4 cup toffee bits
  • 3/4 cup mini marshmallows
  • 1/2 cup mini chocolate chips

Directions:

  1. Preheat the oven to 375º F. Line a baking sheet or two with silpats or parchment paper.
  2. With an electric mixer or stand mixer, beat together the butter and both sugars until fluffy and well mixed.
  3. Add in the egg, egg yolk and vanilla, mixing until well mixed.
  4. Add in the flour, baking powder and baking soda, mixing until the flour is completely incorporated. The dough will be soft.
  5. Add in the toffee bits, marshmallows and chocolate chips, mix until well combined.
  6. Scoop out rounded tablespoons of dough and place on prepared baking sheets 3 inches apart.
  7. Bake for 10-12 minutes or until the edges of cookies are lightly golden brown.
  8. Remove the baking sheets from the oven and place on a cooling rack and allow the cookies to cool for 1 minute.
  9. Remove the cookies from the baking sheets and place on the cooling rack to cool completely.
