Wow, these cookies are yummy. The combination of chocolate, toffee and marshmallows make this cookie hard to resist.
I decided to make these cookies to use up some marshmallows I had in the pantry, but it also helped me to use up some chocolate chips and toffee bits. These cookies were meant to be since I had the exact amount of chocolate chips, toffee bits and mini marshmallows.
Marshmallow Toffee Cookies
Ingredients:
- 1 cup unsalted butter, room temperature
- 3/4 cup packed brown sugar
- 3/4 cup granulated sugar
- 1 egg
- 1 egg yolk
- 2 teaspoons vanilla extract
- 3 cups all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 3/4 cup toffee bits
- 3/4 cup mini marshmallows
- 1/2 cup mini chocolate chips
Directions:
- Preheat the oven to 375º F. Line a baking sheet or two with silpats or parchment paper.
- With an electric mixer or stand mixer, beat together the butter and both sugars until fluffy and well mixed.
- Add in the egg, egg yolk and vanilla, mixing until well mixed.
- Add in the flour, baking powder and baking soda, mixing until the flour is completely incorporated. The dough will be soft.
- Add in the toffee bits, marshmallows and chocolate chips, mix until well combined.
- Scoop out rounded tablespoons of dough and place on prepared baking sheets 3 inches apart.
- Bake for 10-12 minutes or until the edges of cookies are lightly golden brown.
- Remove the baking sheets from the oven and place on a cooling rack and allow the cookies to cool for 1 minute.
- Remove the cookies from the baking sheets and place on the cooling rack to cool completely.
Yields about 4 dozen.
