I really enjoy the combination of honey and mustard. In fact, it is one of my favorite salad dressings. This flavor combination is now the center of a delicious dinner.
This chicken would taste amazing over a bed of rice or noodles and then drizzled with the sauce in the bottom of the pan. For even more sauce you can double the sauce ingredients.
Baked Honey Mustard Chicken
Ingredients:
- 4 boneless skinless chicken breasts
- black pepper, to taste
- 2 tablespoons olive oil, divided
- 1/4 cup honey
- 1 tablespoon dijon mustard
- 1 tablespoon yellow mustard
- 1 tablespoon wholegrain mustard
- 1/2 teaspoon white vinegar
- 1/8 teaspoon paprika
Directions:
- Preheat the oven to 375º F. Lightly spray a 9x13 inch baking dish with cooking spray.
- Heat 1 1/2 tablespoons olive oil in a skillet, over medium-high heat.
- Season both sides of the chicken breasts with black pepper and add to the skillet. Cook for 2 minutes on each side or until browned, do not cook all the way through.
- In a small bowl, whisk together 1/2 tablespoon olive oil, honey, all mustards, vinegar and paprika.
- Once chicken is browned on both sides, transfer to the prepared baking dish and pour the honey mustard sauce over top of the chicken. Turn the chicken over to coat both sides.
- Cover the baking dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the chicken is completely cooked.
- Remove the baking dish from the oven and let the chicken rest for 5 minutes before serving.
Notes:
My chicken breasts were about 10 ounces each.
