Are you looking for a delicious twist on a potato side dish that is nice and flavorful? Do you like side dishes that are easy to prepare? Then this casserole is for you.
I wouldn't say this side dish is overly spicy, but the chipotle peppers do give it some nice flavor.
Cheesy Chipotle Bacon Potato Casserole
Ingredients:
- 32 ounce bag frozen diced hash brown potatoes
- 10 1/2 ounce can cheddar cheese soup
- 1/2 cup unsalted butter, melted
- 8 ounces sour cream
- 1 cup shredded monterey jack cheese
- 1 cup shredded cheddar cheese
- 12 slices bacon, cooked and crumbled
- 3 chipotle peppers, diced
- 1 tablespoon chipotle pepper sauce (from the can)
- 6 green onions, chopped
- black pepper, to taste
Directions:
- Preheat the oven to 350º F. Spray a 9x13 inch baking dish with cooking spray.
- In a large bowl stir together all in the ingredients until well mixed.
- Transfer the mixture to the prepared baking dish and spread into an even layer.
- Bake for 40 minutes or until the dish is bubbly and the edges are browned.
Notes:
I used turkey bacon.
