Cherry Almond Baked Oatmeal: Savory Sweet and Satisfying

Cherries are a favorite of mine and anytime I can use them in a recipe I will. I love the tart flavor cherries have and they give baked oatmeal the best flavor. Add some almonds for a little crunch and you have a warm and filling breakfast.

Cherry Almond Baked Oatmeal: Savory Sweet and Satisfying

In this oatmeal I used slivered almonds because I somehow happened to have two bags of them and I did not want to buy another bag of almonds when I had some that I should probably use up. 

Cherry Almond Baked Oatmeal

Ingredients:

  • 2 tablespoons unsalted butter, melted and cooled
  • 2 cups old fashioned rolled oats
  • 1/2 cup brown sugar, lightly packed
  • 1 teaspoon aluminum-free baking powder
  • 1 1/2 cups milk
  • 1/4 cup unsweetened applesauce
  • 1 egg
  • 1/2 teaspoon almond extract
  • 1 cup frozen tart cherries
  • 1/4 cup sliced almonds

Directions:

  1. Preheat the oven to 375º F.
  2. In a large bowl stir together the oats, brown sugar and baking powder.
  3. In a medium bowl whisk together the cooled butter, milk, applesauce, egg and almond extract.
  4. Stir the milk mixture into the oat mixture until well mixed.
  5. Pour the mixture into an 8-inch square baking dish and evenly place the cherries around the dish pressing down lightly.
  6. Bake for 20-22 minutes or until the oatmeal is lightly browned and slightly crisp around the edges. Top with the almonds for the last 5 minutes of baking time.
