Cherries are a favorite of mine and anytime I can use them in a recipe I will. I love the tart flavor cherries have and they give baked oatmeal the best flavor. Add some almonds for a little crunch and you have a warm and filling breakfast.
In this oatmeal I used slivered almonds because I somehow happened to have two bags of them and I did not want to buy another bag of almonds when I had some that I should probably use up.
Cherry Almond Baked Oatmeal
Ingredients:
- 2 tablespoons unsalted butter, melted and cooled
- 2 cups old fashioned rolled oats
- 1/2 cup brown sugar, lightly packed
- 1 teaspoon aluminum-free baking powder
- 1 1/2 cups milk
- 1/4 cup unsweetened applesauce
- 1 egg
- 1/2 teaspoon almond extract
- 1 cup frozen tart cherries
- 1/4 cup sliced almonds
Directions:
- Preheat the oven to 375º F.
- In a large bowl stir together the oats, brown sugar and baking powder.
- In a medium bowl whisk together the cooled butter, milk, applesauce, egg and almond extract.
- Stir the milk mixture into the oat mixture until well mixed.
- Pour the mixture into an 8-inch square baking dish and evenly place the cherries around the dish pressing down lightly.
- Bake for 20-22 minutes or until the oatmeal is lightly browned and slightly crisp around the edges. Top with the almonds for the last 5 minutes of baking time.
