Pork Stir Fry with Broccoli

Pork Stir Fry with Broccoli: Savory Sweet and Satisfying

In just about 30 minutes you can have this simple stir fry on the table. It is easy to make, has great flavor and perfect for a weeknight dinner.

For the broccoli, you want the florets to be about 1 1/2 inch or smaller. But most importantly you want them roughly the same size so they cook evenly.

My husband loved this stir fry, but thought it would taste even better served over rice. So next time I will have to try it with some rice.

Pork Stir Fry with Broccoli

Ingredients:
  • 1 pound ground pork
  • 1 tablespoon corn starch
  • 1 tablespoon canola oil
  • 8 ounces small broccoli florets, about 1 1/2 inches
  • 1/2 cup low sodium beef broth
  • 3 green onions
  • 1/4 cup low sodium soy sauce
  • 1 1/2 tablespoons granulated sugar
  • 5 cloves garlic, minced
  • black pepper, to taste
Directions:
  1. Pat the ground pork with paper towels, to remove any extra moisture.
  2. Add the pork to a large bowl and evenly sprinkle with corn starch. Using your hands, work the corn starch into the ground pork until well mixed.
  3. In a large skillet, heat the oil over medium-high heat until hot. Add the pork to the skillet and cook until no longer pink and crumbled, about 5 minutes.
  4. Stir the broccoli florets into the pork and add the beef broth. Cook until the broccoli is tender crisp, about 5 minutes, stirring occasionally. If the pan gets dry, add some more beef broth.
  5. While the broccoli is cooking, add the soy sauce, sugar and garlic to a small saucepan. Heat over medium-low heat until it starts to simmer, about 5 minutes, stirring occasionally.
  6. Once the sauce starts to simmer reduce the heat to low to keep the sauce warm, stirring occasionally.
  7. Once the broccoli is done, pour the sauce over the broccoli and pork and stir well to evenly coat with the sauce. Cook for a few minutes or until the broccoli is tender.
  8. Turn off the heat and stir in the green onions. Season with black pepper.
