Fried Onion Cheesy Broccoli Bake: Savory Sweet and Satisfying

Cheesy broccoli gets a bit of an upgrade with bacon and crunchy fried onions. Plus this broccoli casserole uses white cheddar and provolone cheese instead of the traditional cheddar cheese.

Fried Onion Cheesy Broccoli Bake

Ingredients:

  • 2 pounds fresh broccoli florets
  • 2 tablespoons olive oil
  • ground black pepper
  • 1 egg
  • 1 cup heavy cream
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes
  • 1 cup shredded provolone cheese
  • 1 cup shredded white cheddar cheese
  • 8 ounces bacon, cooked and crumbled
  • 1 cup fried onions, roughly chopped

Directions:

  1. Preheat the oven to 400º F. Lightly spray a 8x8 inch baking dish with cooking spray.
  2. Spread the broccoli out on a baking sheet and drizzle it with the olive oil and then season with black pepper.
  3. Toss the broccoli with the olive oil and black pepper and roast for 15-20 minutes or until partially softened.
  4. In a large bowl whisk together the egg, heavy cream, garlic powder, onion powder and red pepper flakes. Stir in both cheeses.
  5. Remove the broccoli from the oven and transfer to the prepared baking dish. Sprinkle 3/4 of the bacon over the broccoli and pour the cheese mixture over top. Gently stir everything together.
  6. Sprinkle the remaining bacon and the fried onions over top.
  7. Reduce the oven temperature to 350º F and bake the casserole for 20-25 minutes or until the casserole is bubbly and just set.
  8. Remove from the oven and allow to cool for 5 minutes before serving.
