Neapolitan Overnight Oats

Neapolitan Overnight Oats: Savory and Satisfying


One of my favorite ice cream flavors is Neapolitan, I love that you get three different flavors in an ice cream. I have made a few desserts and have a few more desserts that I want to make, inspired by Neapolitan ice cream. But having a healthy breakfast inspired by the ice cream is the best and I love it!

Neapolitan Overnight Oats

Ingredients:

Vanilla

  • 1/3 cup old fashioned rolled oats
  • 2 tablespoons nonfat Greek yogurt
  • 1/3 cup milk
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon honey

Chocolate

  • 1/3 cup old fashioned rolled oats
  • 2 teaspoons cocoa powder
  • 1/3 cup milk
  • 1/2 tablespoon honey

Strawberry

  • 1/3 cup old fashioned rolled oats
  • 1 1/2 tablespoons nonfat Greek yogurt
  • 2 large strawberries
  • 1/4 cup milk
  • 1 teaspoon honey

Directions:

Vanilla

  1. In a small bowl add all of the ingredients and stir to mix.
  2. Cover the bowl and refrigerate overnight.

Chocolate

  1. In a small bowl add all of the ingredients and stir to mix.
  2. Cover the bowl and refrigerate overnight.

Strawberry

  1. Place the strawberries and milk into a blender and purée.
  2. Transfer the strawberry mixture into a small bowl and add in the rest of the ingredients, mix well.
  3. Cover the bowl and refrigerate overnight.

Putting Together

  1. In the morning layer the three different overnight oats into two bowls.
Enjoy!!!

Notes:
You can use frozen or fresh strawberries. If using frozen, you do not need to thaw them first as long as your blender can process frozen fruit well.
