Jalapeño Popper Corn Salad

Jalapeño Popper Corn Salad: Savory Sweet and Satisfying

I have been off of corn lately or more like this past year. I have not really felt like eating it. I'm not sure why, but it has not sounded good and I have not had the desire to prepare any corn recipes. However, when I was looking for a vegetable side dish I found this one and wanted to make it, but still did not feel like eating corn, but I made it anyways and I am so glad I did. It was so very delicious.

Creamy, cheesy corn loaded with bacon is a great way to eat your vegetables.

Taking the seeds out of the jalapeños reduce most of the heat. In fact I really did not get any heat in this salad, so next time I will leave the seeds in one or both of the jalapeños to give the salad a little bit more heat.

Jalapeño Popper Corn Salad

Ingredients:

  • 6 cups frozen corn, thawed
  • 1/4 cup olive oil
  • 1/2 teaspoon black pepper
  • 2 ounces cream cheese, softened
  • 1/4 cup sour cream
  • 2 jalapeños, seeds removed and finely diced
  • 16 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • black pepper, to taste

Directions:

  1. Preheat the oven to 450º F. Line a baking sheet with aluminum foil.
  2. Pat the corn dry with paper towels to remove any excess water.
  3. In a large bowl combine the corn, olive oil and black pepper, coating the corn well with the oil.
  4. Spread the corn out in a single layer on the baking sheet.
  5. Bake for 5 minutes. Stir and cook for an additional 5 minutes or until the corn begins to brown, stirring occasionally.
  6. Remove from the oven and allow the corn to cool for about 10 minutes.
  7. In a large bowl, stir together the cream cheese and sour cream until well blended.
  8. Add in the remaining ingredients along with the corn and season with black pepper. Stir until well mixed.

Notes:
If you want a little more heat, leave the seeds in one or both jalapeños.
