I have been off of corn lately or more like this past year. I have not really felt like eating it. I'm not sure why, but it has not sounded good and I have not had the desire to prepare any corn recipes. However, when I was looking for a vegetable side dish I found this one and wanted to make it, but still did not feel like eating corn, but I made it anyways and I am so glad I did. It was so very delicious.
Creamy, cheesy corn loaded with bacon is a great way to eat your vegetables.
Taking the seeds out of the jalapeños reduce most of the heat. In fact I really did not get any heat in this salad, so next time I will leave the seeds in one or both of the jalapeños to give the salad a little bit more heat.
Jalapeño Popper Corn Salad
Ingredients:
- 6 cups frozen corn, thawed
 - 1/4 cup olive oil
 - 1/2 teaspoon black pepper
 - 2 ounces cream cheese, softened
 - 1/4 cup sour cream
 - 2 jalapeños, seeds removed and finely diced
 - 16 slices bacon, cooked and crumbled
 - 1 cup shredded cheddar cheese
 - black pepper, to taste
 
Directions:
- Preheat the oven to 450º F. Line a baking sheet with aluminum foil.
 - Pat the corn dry with paper towels to remove any excess water.
 - In a large bowl combine the corn, olive oil and black pepper, coating the corn well with the oil.
 - Spread the corn out in a single layer on the baking sheet.
 - Bake for 5 minutes. Stir and cook for an additional 5 minutes or until the corn begins to brown, stirring occasionally.
 - Remove from the oven and allow the corn to cool for about 10 minutes.
 - In a large bowl, stir together the cream cheese and sour cream until well blended.
 - Add in the remaining ingredients along with the corn and season with black pepper. Stir until well mixed.
 
Notes:
If you want a little more heat, leave the seeds in one or both jalapeños.
