This white chocolate mousse is very rich and delicious. I was originally skeptical about adding the mini chocolate chips. I thought the chocolate chips would interfere with the creaminess of the mousse. However, they only added to the deliciousness of the mousse and I enjoyed the little bit of crunch with the creamy and rich mousse.
White Chocolate Mousse
Ingredients:
- 12 ounces good quality white chocolate, divided
- 1 1/2 cups heavy cream
- mini chocolate chips
Directions:
- In a small saucepan add the chocolate and 1/4 cup cream. Cook a medium-low heat until the chocolate is completely melted. If the cream starts to get bubbly around the edges reduce the heat.
- Remove the pan from the heat and allow to cool completely.
- In a large bowl add the remaining cream and the melted and cooled white chocolate mixture.
- Using an electric mixer beat the cream until soft peaks form.
- Refrigerate until cold and ready to serve.
- Serve with desired amount of mini chocolate chips.
