One day while eating some tapioca, it go me thinking about what other flavors of tapioca could I make. I have only ever made the recipe on the box of minute tapioca. The first flavor that came to my mind was a mocha tapioca.
This tapioca was fantastic! The chocolate flavor is amazing with a subtle coffee flavor.
Mocha Tapioca Pudding
Ingredients:
- 1 cup granulated sugar
- 3 tablespoons minute tapioca
- 3 2/3 cups milk
- 1 egg, lightly beaten
- 2 teaspoons espresso powder
- 2 ounces unsweetened chocolate squares
- 1 teaspoon vanilla extract
Directions:
- In a medium saucepan, combine the sugar and tapioca.
- Whisk in the milk and egg. Let stand for 5 minutes.
- Add in the espresso powder and chocolate squares.
- Cook over medium heat, while stirring constantly, until the mixture comes to a full boil and chocolate is melted and well blended, about 15 minutes.
- Remove the saucepan from the heat and stir in the vanilla extract.
- Allow to cool for 20 minutes and then stir.
- Refrigerate until cold.
