Mocha Tapioca Pudding


One day while eating some tapioca, it go me thinking about what other flavors of tapioca could I make. I have only ever made the recipe on the box of minute tapioca. The first flavor that came to my mind was a mocha tapioca.

This tapioca was fantastic! The chocolate flavor is amazing with a subtle coffee flavor.

Mocha Tapioca Pudding

Ingredients:

  • 1 cup granulated sugar
  • 3 tablespoons minute tapioca
  • 3 2/3 cups milk
  • 1 egg, lightly beaten
  • 2 teaspoons espresso powder
  • 2 ounces unsweetened chocolate squares
  • 1 teaspoon vanilla extract

Directions:

  1. In a medium saucepan, combine the sugar and tapioca.
  2. Whisk in the milk and egg. Let stand for 5 minutes.
  3. Add in the espresso powder and chocolate squares.
  4. Cook over medium heat, while stirring constantly, until the mixture comes to a full boil and chocolate is melted and well blended, about 15 minutes.
  5. Remove the saucepan from the heat and stir in the vanilla extract.
  6. Allow to cool for 20 minutes and then stir.
  7. Refrigerate until cold.
