Tater tots are a favorite of my family and I really enjoy finding new recipes to use them in.

Tater Tot Breakfast Casserole: Savory Sweet and Satisfying

This breakfast casserole is really easy to assemble and has a slight little spicy kick to it. It was so delicious that I had some of the leftovers for dinner and tasted just as good as the day I made it.

Tater Tot Breakfast Casserole

Ingredients:

  • 32 ounces frozen tater tots
  • 8 eggs
  • 1/2 cup milk
  • 10 ounces diced tomatoes with chiles
  • 1 pound bulk sausage
  • 3 cups shredded monterey jack cheese
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Directions:

  1. Preheat the oven to 375º F. Spray a 9x13 inch baking dish with cooking spray.
  2. In a skillet cook and crumble the sausage until completely cooked.
  3. Reserve 2 cups of tater tots and place the remaining in the prepared baking dish.
  4. Sprinkle the sausage over top of the tater tots.
  5. In a large bowl whisk together the eggs, milk, diced tomatoes, black pepper and garlic powder.
  6. Stir two cups of cheese into the egg mixture and pour over the tater tots and sausage.
  7. Top with the remaining tater tots and cheese, creating a design if desired.
  8. Bake for 45-50 minutes or until the tater tots are browned and casserole is bubbly.
