Tater tots are a favorite of my family and I really enjoy finding new recipes to use them in.
This breakfast casserole is really easy to assemble and has a slight little spicy kick to it. It was so delicious that I had some of the leftovers for dinner and tasted just as good as the day I made it.
Tater Tot Breakfast Casserole
Ingredients:
- 32 ounces frozen tater tots
- 8 eggs
- 1/2 cup milk
- 10 ounces diced tomatoes with chiles
- 1 pound bulk sausage
- 3 cups shredded monterey jack cheese
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
Directions:
- Preheat the oven to 375º F. Spray a 9x13 inch baking dish with cooking spray.
- In a skillet cook and crumble the sausage until completely cooked.
- Reserve 2 cups of tater tots and place the remaining in the prepared baking dish.
- Sprinkle the sausage over top of the tater tots.
- In a large bowl whisk together the eggs, milk, diced tomatoes, black pepper and garlic powder.
- Stir two cups of cheese into the egg mixture and pour over the tater tots and sausage.
- Top with the remaining tater tots and cheese, creating a design if desired.
- Bake for 45-50 minutes or until the tater tots are browned and casserole is bubbly.
