My family loves ravioli, but only have so many way to make it. Using it in a soup seemed like a delicious way to use ravioli. Turns out my family really enjoys ravioli in soup form. My girls did not care too much for the spinach in it, but they still ate it and enjoyed the soup.
Ravioli Soup
Ingredients:
- 1 pound roll sausage
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 5 ounces fresh spinach
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 15 ounces tomato sauce
- 4 cup low sodium chicken broth
- 24 ounces frozen mini cheese ravioli
- 1 cup shredded mozzarella cheese
Directions:
- In a large pot cook the sausage over medium heat until completely cooked and crumbled. Drain any excess grease and return to the heat.
- Add in the diced onions and cook until soft, about 4-5 minutes.
- Add in the basil, oregano and garlic, stirring and cooking for 1 minute.
- Add in the spinach and cook until wilted, about 2-3 minutes.
- Add in the tomato sauce and chicken broth, stirring to combine.
- Bring the mixture to a simmer and simmer for 30-40 minutes.
- Add in the ravioli and simmer for 7-10 minutes.
- Serve the soup and top each serving with shredded mozzarella.
