I have been craving everything bagels lately. My normal go to bagel is a salt bagel, but everything bagels have been tasting so good lately. I decided to make a bagel breakfast sandwich and make the bagels an everything bagel.
The first step in making a plain bagel into an everything bagel is to find the everything bagel seasoning. Yes, I could make the seasoning myself, but that would be more expensive and require me to buy several seasonings that I would probably only use for this seasoning mix. Thankfully Costco came through for me and I got a nice size container of everything bagel seasoning at a good price.
These bagel sandwiches did not disappoint and the everything bagel seasoning just made them even better. I need to make these again and real soon.
Mini Breakfast Bagels
Ingredients:
- 8 eggs
- 1/4 cup milk
- 8 slices bacon
- ground black pepper
- 8 mini bagels
- 8 tablespoons cream cheese, room temperature
- 1 cup shredded cheddar cheese
- 2 tablespoons unsalted butter, melted
- everything bagel seasoning
Directions:
- Preheat the oven 350º F. Spray a 9x13 baking dish with cooking spray.
- In a large bowl whisk together the eggs and milk. Set aside.
- In a large non stick skillet, cook the bacon over medium heat until crispy. Transfer the bacon slices to a plate cover with paper towel. If your bacon left more than 1 tablespoon of grease remove the extra.
- Pour the egg mixture into the skillet and turn the heat down to medium-low. Occasionally stir the eggs with spatula or spoon. Once the eggs are almost set season with black pepper and remove from the heat.
- Spread 1 tablespoon of cream cheese on the bottom half of each bagel and place into the prepared baking dish.
- Place the eggs on top of the bagels, then crumble the bacon on top and sprinkle with cheddar cheese.
- Place on the bagel tops, brush with melted butter and sprinkle with everything bagel seasoning.
- Bake for about 10 minutes or until the bagels are toasted and the cheese has melted.
Notes:
You do not want to completely cook the eggs in the skillet, because they will cook more in the oven.
