Sometimes I look at a recipe and I instantly can tell it is going to be a good one, other times I look at a recipe and I am not sure if it will be a good one or not, but am willing to try it. This recipe was the latter of the two, I was not sure how it would taste. The description of the recipe called it a Mexican version of shepherd's pie. Shepherd's pie was never a favorite of mine growing up and I have never made it as an adult. However, this Mexican version is really good and I looked forward to the leftovers.
When making this, make sure your hashbrowns are fully thawed or they will not brown properly and get nice and crispy. I always either forget to thaw something or underestimate the amount of time it will take to thaw, so my hashbrowns did not get as crispy as I wanted them too. But it still turned out good with great flavor.
Mexican Hash Brown Taco Casserole
Ingredients:
- 1 pound ground turkey
- 1/2 cup yellow onion, diced
- 1/2 cup frozen corn, thawed
- 10.5 ounce condensed tomato soup
- 3 ounces cream cheese
- 1 package taco seasoning
- 1 cup cheddar cheese
- 1 cup monterey jack cheese
- 15 ounces frozen hash browns, thawed
- black pepper, to taste
Directions:
- Preheat the oven to 350º F. Lightly spray 2 1/2 quart oblong casserole dish with cooking spray.
- In a large skillet, over medium-high heat, cook the ground turkey and onion until the turkey is completely cooked and crumbled.
- Add in the corn, tomato soup and cream cheese. Stir until well combined and cream cheese has melted.
- Stir in the taco seasoning and 1/2 cup of cheddar cheese and monterey jack cheese.
- Transfer the mixture to the prepared baking dish and smooth into an even layer.
- In a large bowl combine the thawed hash browns and remaining 1/2 cup of both cheeses. Season with black pepper.
- Evenly top the ground turkey mixture with the hash brown mixture and lightly press it down.
- Bake for 30--35 minutes or until the hash browns are crispy and browned,
