Creamy pasta and chicken is loaded with four different types of cheese. This delicious pasta is fairly simple to prepare making it an easy dinner. The only downside is that it only serves 6 and that did not leave a lot of leftovers.
Four Cheese Chicken Pasta Bake
Ingredients:
- 16 ounces cavatappi pasta
- 9 tablespoons unsalted butter
- 4 1/2 tablespoons all purpose flour
- 14.5 ounces low sodium chicken broth
- 1/2 cup half and half
- 1 cup + 2 tablespoons shredded parmesan and romano cheese
- 1 cup + 2 tablespoons monterey jack cheese
- 1 cup + 2 tablespoons shredded sharp white cheddar cheese
- 6 ounces cream cheese
- 10 ounces cooked boneless skinless chicken breast, cubed
- 3 tablespoons shredded parmesan cheese
Directions:
- Preheat the oven to 350º F. Spray a 9x9 square baking dish with cooking spray.
- Cook the pasta according to the package directions and drain.
- In a large saucepan, melt the butter over medium heat.
- Stir in the flour and constantly stir for about 1 minute.
- Slowly add in the broth while whisking constantly. Bring the mixture to a boil, stirring constantly. Once the mixtures reaches a boil, reduce the heat to low.
- Add in the half and half, parmesan and romano cheese, monterey jack cheese, white cheddar cheese and cream cheese. Stir constantly until all of the cheese is completely melted and mixture is smooth.
- Add in the chicken and stir to mix.
- Add in the cooked and drained pasta and stir to mix well.
- Transfer the mixture to the prepared baking dish and sprinkle with the parmesan cheese.
- Bake for 15-25 minutes or until the pasta is hot throughout.
