Chicken Alfredo Stuffed Shells

Chicken Alfredo Stuffed Shells: Savory Sweet and Satisfying

Pasta shells are stuffed with a cheesy chicken mixture and then they are covered in a homemade Alfredo sauce and topped with more cheese. When the shells are done baking they are sprinkled with freshly diced tomatoes and crispy bacon. This is truly a comforting dish.

Chicken Alfredo Stuffed Shells

Ingredients:

  • 12 ounces jumbo shells pasta
  • 2 cups cooked shredded chicken
  • 15 ounces ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1 cup shredded parmesan cheese, divided
  • 2 teaspoons dried Italian seasoning
  • black pepper, to taste
  • 3 tablespoons unsalted butter
  • 2 tablespoons all purpose flour
  • 2 cups half and half
  • 1 cup heavy cream
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup diced tomatoes

Directions:

  1. Preheat the oven to 375º F. Spray a 9x13 inch baking dish with cooking spray.
  2. Cook the pasta according to the package directions and drain well.
  3. Meanwhile, in a large bowl stir together the chicken, ricotta cheese, 1/2 cup mozzarella cheese, 1/4 cup parmesan cheese, Italian seasoning and black pepper.
  4. Melt the butter, over medium heat, in a large pot. Whisk in the flour and cook whisking constantly for 1 minute.
  5. Slowly whisk in the half and half and heavy cream. Whisk constantly until the sauce has just thickened.
  6. Stir in the remaining 3/4 cup parmesan cheese and season with black pepper, keep stirring until the cheese has completely melted.
  7. Spread 1/3 of the sauce into the bottom of the prepared baking dish.
  8. Spoon the chicken and cheese filling into jumbo shells and place the shells into a single layer in the baking dish.
  9. Spoon the remaining sauce over top of the stuffed shells and sprinkle with 1 cup mozzarella cheese.
  10. Bake uncovered for 25 minutes or until the pasta is bubbly and cheese has melted and just started to brown.
  11. Remove from the oven and sprinkle with the bacon and tomatoes.
