For some reason I have been on a sloppy joe kick, I think I have tried four different recipes at this point. Only two of the recipes were keepers, but that is okay two is better than none. Unfortunately the first two I tried were not keepers and my husband was starting to question my sloppy joe making skills. But then came this sloppy joe recipe and he changed his tune. What really makes this sloppy joe's is that it is made with Italian sausage links. We loved the flavor of the sausage paired with the barbecue sauce and the pockets of the melty cheese just added to the deliciousness.
Barbecue Sausage Sloppy Joes
Ingredients:
- 19 ounces Italian sausage links
- 1/2 red bell pepper, finely diced
- 1/2 green bell pepper, finely diced
- 1/2 yellow onion, finely diced
- 1 cup barbecue sauce
- 1 cup tomato sauce
- 1 cup beef broth
- 4 ounces sharp cheddar cheese, cut into small cubes
- 6 hamburger buns
Directions:
- Heat a skillet over medium-high heat.
- Remove the sausage from the casing and place in the skillet. Cook the sausage, breaking it up as it cooks, until completely cooked.
- Transfer the sausage to a plate and drain the oil from the pan, leaving 2 tablespoons.
- Add the peppers and onions to the skillet and cook, stirring often, for 5-7 minutes or until softened.
- Add the barbecue sauce, tomato sauce and beef broth to the skillet.
- Simmer the mixture until it has reduced by half, about 6-8 minutes.
- Add the sausage back to the skillet and stir to mix.
- Add in the cheddar cheese and gently mix just until the cheese starts to melt.
- Serve on buns.
