Chicken salad has never been a high on my list of recipes to make. In fact I can take or leave chicken salad. But when a chicken salad has dill pickles in, I have to try that recipe.
This salad was way better than I had anticipated. The dill pickles added so much flavor and made the chicken salad so delicious. Plus traditional chicken salad is usually loaded with mayonnaise and I do not like a ton of mayonnaise. But with this chicken salad there is a little bit of mayonnaise mixed with cream cheese for a creamy salad without the heavy mayonnaise taste.
Dill Pickle Chicken Salad Sandwich
Ingredients:
- 8 ounces cream cheese, softened
- 1/2 cup mayonnaise
- 1 tablespoon dill pickle juice (from the pickle jar)
- 3/4 teaspoon dried dill
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 4 cups shredded chicken breasts
- 1 cup diced dill pickles
- 1/3 cup sliced green onions
Directions:
- In a large bowl stir together the cream cheese, mayonnaise, dill pickle juice, dried dill, garlic powder and black pepper. Stir until well combined and smooth.
- Add in the shredded chicken, diced pickles and green onions. Stir everything together.
- Refrigerate for at least 5 hours or overnight.
Notes:
You can serve the chicken salad on rolls, buns, ciabatta bread, croissants or even with crackers. Depending on what you serve the salad with, will determine how many servings you get.
