 Sheet Pan Barbecue Chicken Nachos: Savory Sweet and Satisfying

Nachos are such a comfort food for me. I think I could eat them at least once a week and never get tired of eating them. I already have a nacho recipe that I love, but it is made with a ground meat and sometimes I like chicken on my nachos. Seeing a nacho recipe that not only had chicken on it, but barbecue chicken sounded like a recipe that I needed to make.

To be completely honest these nachos are not as good as my other Nachos recipe. But they are quite delicious and I will make them occasionally to switch up my taco and nacho routine.

Sheet Pan Barbecue Chicken Nachos

Ingredients:

  • 6 slices turkey bacon, cooked and crumbled
  • 1 1/2 pounds boneless skinless chicken breasts
  • olive oil
  • black pepper
  • 1- 1 1/4 cups sweet barbecue sauce
  • 1-2 bags tortilla chips
  • 8 ounces shredded sharp cheddar cheese
  • 8 ounces shredded monterey jack cheese
  • diced red onion

Directions:

  1. Preheat 400º F.
  2. Place the chicken on a rimmed baking sheet and drizzle with olive oil.
  3. Coat the chicken in the oil and season with black pepper.
  4. Bake the chicken for 18-20 minutes or until completely cooked.
  5. Allow the chicken to rest for 5 minutes before shredding.
  6. Transfer the chicken to a bowl and add 3/4 cup barbecue sauce. Stir to mix.
  7. Reduce the oven temperature to 325º F.
  8. Cover a large rimmed baking sheet or 2 small-medium rimmed baking sheets with a layer of tortilla chips.
  9. Sprinkle a small amount of both cheeses on top of the chips.
  10. Spread the barbecue chicken over top of the cheese.
  11. Sprinkle the remaining cheese over top and top with the diced red onion and crumbled bacon.
  12. Drizzle the top of nachos with additional barbecue sauce.
  13. Bake for 10-15 minutes or until the cheese is melted and the barbecue sauce is caramelized.
