Nachos are such a comfort food for me. I think I could eat them at least once a week and never get tired of eating them. I already have a nacho recipe that I love, but it is made with a ground meat and sometimes I like chicken on my nachos. Seeing a nacho recipe that not only had chicken on it, but barbecue chicken sounded like a recipe that I needed to make.
To be completely honest these nachos are not as good as my other Nachos recipe. But they are quite delicious and I will make them occasionally to switch up my taco and nacho routine.
Sheet Pan Barbecue Chicken Nachos
Ingredients:
- 6 slices turkey bacon, cooked and crumbled
- 1 1/2 pounds boneless skinless chicken breasts
- olive oil
- black pepper
- 1- 1 1/4 cups sweet barbecue sauce
- 1-2 bags tortilla chips
- 8 ounces shredded sharp cheddar cheese
- 8 ounces shredded monterey jack cheese
- diced red onion
Directions:
- Preheat 400º F.
- Place the chicken on a rimmed baking sheet and drizzle with olive oil.
- Coat the chicken in the oil and season with black pepper.
- Bake the chicken for 18-20 minutes or until completely cooked.
- Allow the chicken to rest for 5 minutes before shredding.
- Transfer the chicken to a bowl and add 3/4 cup barbecue sauce. Stir to mix.
- Reduce the oven temperature to 325º F.
- Cover a large rimmed baking sheet or 2 small-medium rimmed baking sheets with a layer of tortilla chips.
- Sprinkle a small amount of both cheeses on top of the chips.
- Spread the barbecue chicken over top of the cheese.
- Sprinkle the remaining cheese over top and top with the diced red onion and crumbled bacon.
- Drizzle the top of nachos with additional barbecue sauce.
- Bake for 10-15 minutes or until the cheese is melted and the barbecue sauce is caramelized.
