Potsticker Noodle Bowl


Potstickers are a Chinese dish that I really enjoy. So I was excited to try it as a noodle dish. Plus it is not as complicated as traditional potstickers, the main reason I have never made traditional potstickers, because of the work that goes into them. But this dish takes about 30 minutes from start to finish and tastes so very delicious. So delicious that I could not wait to eat the leftovers the following night. 

Potsticker Noodle Bowl

Ingredients:

  • 8 ounces linguini pasta
  • 3/4 cup + 1 tablespoon low sodium soy sauce
  • 1/4 cup low sodium chicken broth
  • 2 teaspoons rice vinegar
  • pinch red pepper flakes
  • 1/8 teaspoon ground ginger
  • 1 tablespoon canola oil
  • 1 pound ground pork
  • black pepper, to taste
  • 14 ounce bag coleslaw mix
  • 7 green onions, chop the green parts into 2 inch pieces and white parts into 1/2 inch pieces
  • 2 garlic cloves, minced
  • 2 eggs, lightly beaten

Directions:

  1. Cook the noodles according to the package directions, cooking until al dente. Drain.
  2. In a small bowl whisk together 3/4 cup soy sauce, chicken broth, rice vinegar, ground ginger and red pepper flakes. Set aside.
  3. Combine the ground pork with the remaining 1 tablespoon soy sauce.
  4. In a large nonstick skillet, over high heat, add the oil and heat.
  5. Add in the pork and season with black pepper. Cook the ground pork, breaking it up as it cooks.
  6. When the pork is completely cooked, add in the coleslaw mix and green onions, stirring just until the coleslaw begins wit wilt, about 1 minute.
  7. Add in the garlic and cook, stirring for 30 seconds.
  8. Make a well in the middle of the skillet and reduce the heat to medium. Add in the eggs and scramble.
  9. Once the eggs are scrambled, stir everything together.
  10. Add the noodles to the skillet and stir everything together.
  11. Add in the soy sauce mixture and stir everything together until well coated in the sauce.
