Chicken and Cauliflower Jalapeño Popper Casserole: Savory Sweet and Satisfying

It is no secret that I love jalapeño poppers. The combination of the spicy jalapeño, cream cheese and bacon is just so good. So adding those flavors to a casserole with chicken and cauliflower make a really delicious casserole.

My husband was unsure of the cauliflower in this dish, but after one bite he was in love with the casserole and said if I hadn't told him there was cauliflower in it he probably wouldn't have known.

Chicken and Cauliflower Jalapeño Popper Casserole

Ingredients:

  • 1 pound cauliflower cut into 1/2" pieces
  • olive oil
  • 8 ounces reduced fat cream cheese, softened
  • 1 cup sour cream
  • 3/4 cup shredded cheddar cheese, divided
  • 16 slices turkey bacon, cooked
  • 1/2 cup seeded and diced jalapeños peppers
  • 1 teaspoon garlic powder
  • 1 pound chicken breasts, cooked and shredded
  • 1 jalapeño, thinly sliced into rounds

Directions:

  1. Preheat the oven to 400º F. Spray a 9x13 baking dish with cooking spray.
  2. Place the cauliflower pieces on a baking sheet and drizzle with olive oil. Toss the cauliflower to coat in the oil.
  3. Roast the cauliflower for 20 minutes or until tender.
  4. Transfer the cauliflower to a colander and allow to drain any liquid.
  5. In a large bowl, add in the cream cheese and sour cream. Using a hand mixer, mix well.
  6. Crumble in 11 slices of bacon and add in the diced jalapeños, 1/2 cup cheddar cheese and garlic powder. Stir to mix well.
  7. Add in the chicken and roasted cauliflower and stir to combine.
  8. Transfer the mixture to the prepared baking dish.
  9. Sprinkle the remaining 1/4 cup of cheddar cheese and crumble the remaining 5 bacon slices on top. Place the jalapeño slices on top.
  10. Bake for 25-30 minutes or until bubbly around the edges.

Notes:
1/2 cup of diced jalapeños is about 3 medium or 2 large jalapeños.
