These hash brown bites are easy to prepare and taste delicious. Just note, they taste best the day they are made. We reheated them the next day and we all noticed they did not taste nearly as delicious.
Cheesy Hash Brown Bites
Ingredients:
- 1 egg
- 1/2 cup sour cream
- 3/4 cup colby jack cheese
- 3/4 cup sharp cheddar cheese
- 6 slices bacon, cooked and crumbled
- 20 ounces frozen hash browns
Directions:
- Preheat the oven to 425º F. Spray a mini muffin tin with cooking spray.
- In a large bowl mix together the egg and sour cream.
- Add in both cheeses and bacon, stirring to mix.
- Add in the hash browns and mix well.
- Evenly divide the hash brown mixture between the muffins cups and firmly press the mixture down into the muffin cups.
- Bake for 20 minutes or until the hash brown bites are golden brown.
