After enjoying these waffles I decided I need more waffle recipes in my life. I have a lot of pancake recipes on this blog, but need more waffle recipes, especially ones like this. Waffles loaded with fresh strawberries and then topped with the most delicious lemon cream and more fresh strawberries. Absolutely delicious!
Strawberry Waffles
Ingredients:
- 2 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/4 cup granulated sugar
- 2 eggs, lightly beaten
- 1 1/2 cups half and half
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup diced strawberries
- 1/2 cup heavy whipping cream
- 1/4 cup lemon curd
- sliced strawberries
Directions:
- Preheat your waffle iron.
- In a large bowl, whisk together the flour, baking soda and sugar.
- In a medium bowl whisk together the eggs, half and half, butter and vanilla extract.
- Create a well in the middle of the dry ingredients and pour in the wet ingredients. Use a fork to mix everything together, just until combined, do not over mix.
- Gently stir in the diced strawberries.
- Pour the recommended amount of batter into the waffle iron and cook the waffles according to your waffle iron's directions, until golden brown.
- Meanwhile, in a medium bowl whisk the heavy cream until it starts to thicken.
- Add in the lemon curd and continue to beat until stiff peaks form.
- Top the waffles with the whipped lemon cream and sliced strawberries.
