Bite sized pancakes are topped with a maple icing and chopped bacon. My family loved them so much that they did not last long. My husband even loved them cold, straight out of the fridge. Every time he went into the kitchen he would grab one out of the fridge.
Maple, Bacon, Pancake Bites
Ingredients:
- 3 cups all purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 2 1/2 cups milk
- 1 tablespoon white distilled vinegar
- 2 teaspoons vanilla extract
- 2 eggs
- 4 tablespoons unsalted butter, melted and slightly cooled
- 1/2 cup cream cheese, softened
- 1 cup confectioners' sugar
- 1/4 cup maple syrup
- 1 pound bacon, cooked and finely chopped
Directions:
- Preheat the oven to 425º F. Spray two mini muffin tins with cooking spray.
- In a large bowl whisk together the flour, sugar and baking powder. Set aside.
- In a small bowl stir together the milk and vinegar and let sit for 1 minute. Whisk in the vanilla, eggs, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix well.
- Fill the muffin cups 2/3 full.
- Bake for 9-12 minutes or until lightly golden brown on top.
- Meanwhile, in a small bowl, whisk together the cream cheese, sugar and maple syrup until smooth.
- Once the muffins are done allow to cool enough to be able to handle them.
- Dip the tops of muffins into the icing and then sprinkle with bacon.
