Chocolate Dipped Peanut Butter Stuffed Pretzels: Savory Sweet and Satisfying

Holy smokes, these pretzels are amazing!! So absolutely delicious!! The combination of white chocolate, toffee bits, creamy peanut butter and salted pretzel is heavenly. Just looking at the picture makes me want some more.

Now with these pretzels the original recipe called for 12 ounces of white chocolate chopped, I used 12 ounces of white chocolate chips and only had enough to coat 8 pretzels. I am not sure if using the white chocolate chips versus a bar of white chocolate made the difference, but just be advised if you substitute you chips for a bar you may need more than one bag.

Since I needed more chocolate to finish the rest of the pretzels I used some of the other chocolate chips I had, like dark chocolate and semi-sweet. However, they were not even close to being as good as the white chocolate. White chocolate is definitely the chocolate to use to coat the pretzels.

Chocolate Dipped Peanut Butter Stuffed Pretzels

Ingredients:

  • 20 large hard pretzels
  • 1 cup creamy peanut butter
  • 12 ounces white chocolate, chopped
  • 1 tablespoon + 1 teaspoon shortening, divided
  • 4 ounces dark chocolate, chopped
  • 1/2 cup toffee bits

Directions:

  1. Line a large baking sheet with a silpat or parchment paper.
  2. Place the pretzels on the prepared baking sheet and spread 1-2 tablespoons peanut butter into the holes and on the tops of the pretzels, creating a smooth top.
  3. Place the baking sheet into the freezer for 20 minutes, or until frozen completely solid.
  4. Meanwhile, place the chopped white chocolate and 1 tablespoon shortening in a large bowl and microwave for 30 seconds. Stir well and then microwave in 30 second intervals stirring well after each time until the chocolate is completely melted and smooth. Allow to cool slightly so it does not melt the peanut butter, but do not allow it to cool too much or it will firm up.
  5. Place one pretzel into the white chocolate and flip it over completely covering it in chocolate. Use a fork to lift out the pretzel and allow the excess chocolate to drip off the pretzel back into the bowl. Place the pretzel back on the baking sheet. Repeat with the remaining pretzels.
  6. In a small bowl add the chopped dark chocolate and 1 teaspoon shortening. Microwave for 30 seconds. Stir well and then microwave in 30 second intervals stirring well after each time until the chocolate is completely melted and smooth.
  7. Drizzle the dark chocolate over top of the pretzels and sprinkle with toffee bits.
  8. Allow the chocolate to set before serving.
