Sometimes I am in the mood for pizza, but do not feel like making a pizza starting with the dough. So that is where recipes like this come in handy, the flavors of a pizza without needing to make a dough and waiting for it to rise.
With this quinoa you can add in your favorite pizza toppings and customize to your liking. Want some veggies, add in some sliced mushrooms, or diced peppers. Want something other than pepperoni, add in some cooked and crumbled sausage. If you enjoy it on your pizza, then you will enjoy it in this quinoa.
Quinoa Pizza
Ingredients:
- 1 cup quinoa, uncooked
- 2 cups veggie stock
- 24 ounces pizza saue
- 8 ounces shredded mozzarella cheese
- 2-3 cups pizza toppings of your choice
- grated parmesan cheese
- crushed red pepper flakes
Directions:
- Preheat the oven to 425º F.
- Cook the quinoa in the vegetable stock according to the directions on the quinoa package.
- When the quinoa is done fluff it with a fork.
- Stir in 1/2 cup of pizza sauce to the quinoa.
- Spray a 9x13 baking dish with cooking spray.
- Spread 1/2 of the pizza sauce onto the bottom of the prepared baking dish.
- Add 1/2 of the quinoa to the baking dish and spread into an even layer.
- Sprinkle on 1/3 of the shredded cheese.
- Top with a single layer of pizza toppings.
- Spread the remaining pizza sauce on top followed by the remaining quinoa.
- Sprinkle another 1/3 of the shredded cheese on top, followed by another even layer of pizza toppings.
- Sprinkle the remaining shredded on top.
- Bake for 20 minutes, or until the cheese is melted and everything is heated through.
- Sprinkle each serving with parmesan cheese and crushed red pepper flakes if desired.
