This is such an easy dinner and it cooks all on one sheet pan making clean up easy as well. Plus it is so delicious and the leftovers do not last long. I might have to start doubling the recipe.
Oven Roasted Smoked Sausage and Potatoes
Ingredients:
- 16 ounces smoked sausage, sliced
- 1 yellow onion, diced
- 5 large russet potatoes, cut into 1/2 inch cubes
- 2 tablespoons olive oil
- black pepper, to taste
- 2 teaspoons paprika
- 1 teaspoon dried thyme
- 1 cup shredded cheddar cheese
Directions:
- Preheat the oven to 400º F.
- Line a baking sheet with sides with foil and spray with cooking spray.
- In a large bowl add the sausage, onions and potatoes. Drizzle with the olive oil and season with black pepper, paprika and thyme.
- Toss everything together and spread out onto the prepared baking sheet.
- Bake for 45-60 minutes, or until the potatoes are golden brown and tender, stirring halfway through the baking time.
- Sprinkle the cheese over top and bake for 3-5 minutes or until the cheese has melted.
