If you have leftover ham from the holidays, then this is the prefect soup to use it up in. If you don't have any leftover ham, this soup is totally worth buying some ham steaks for. It is a creamy and filling soup that will warm you up on these cold days.
Crock Pot Cheesy Ham Chowder
Ingredients:
- 1 1/2 pounds russet potatoes, peeled and diced into 1/2 inch cubes
- 20 ounces frozen corn, thawed
- 4 cups cubed ham steaks, diced into 1/2 inch cubes
- 1 large yellow onion
- 4 ribs celery, diced
- 5 cloves garlic, minced
- 1/2 teaspoon black pepper
- 4 cups low sodium chicken broth
- 2 cups whole milk
- 2 tablespoons cornstarch
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1/2 tablespoon dried parsley
- In a crock pot add the diced potatoes, corn, diced ham, diced onion, diced celery, minced garlic, black pepper and chicken broth. Stir everything together.
- Place the lid on the the crock pot and cook on low for 8-10 hours, or until the potatoes are tender.
- In a small bowl whisk together the milk and corn starch until smooth.
- Stir the milk mixture into the crock pot.
- Place the lid on the crock pot and cook on high for an additional 20-25 minutes, or until thickened, stirring occasionally.
- Turn off the crock pot and add in the sour cream, shredded cheese and parsley. Stir until the cheese is completely melted.
