Pumpkin spice and coffee is a very popular combination. So why not combine pumpkin spice and coffee in a bread and top it with a coffee glaze?
Such a delicious and easy treat that pairs well with your morning cup of coffee.
Pumpkin Spice Latte Bread
Ingredients:
- 1/2 cup canola oil
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 2 eggs
- 1 cup pumpkin puree
- 1/2 teaspoon baking powder
- 1 1/2 teaspoons pumpkin pie spice
- 1 3/4 cups all purpose flour
- 1/3 cup milk
- 1/2 tablespoon espresso powder
- 1 cup powder sugar
- 1 tablespoon + 1 teaspoon brewed coffee, cold
Glaze
Directions:
- Preheat the oven to 350º F. Spray an 8 1/2 x 4 inch loaf pan with cooking spray.
- In a large bowl, beat together the oil and both sugars until well mixed. Add in the eggs and pumpkin and beat again until well mixed.
- In another large bowl, whisk together the baking powder, baking soda, pumpkin pie spice and flour.
- In a small bowl whisk together the espresso powder and milk.
- Alternate adding the flour mixture and milk mixture, beginning with the flour mixture.
- Pour the batter into the prepared loaf pan.
- Bake for 55-60 minutes or until and inserted toothpick comes out with just a few crumbs on it.
- Allow the bread to cool for 10 minutes in the pan, then flip the bread out and allow to cool completely.
- In a small bowl whisk together the powdered sugar and cooled coffee. Spread on the top of the cooled bread.
