Simple Italian White Bean and Pasta Soup: Savory Sweet and Satisfying

The only reason I enjoy tolerate cold weather is because of soups and hot chocolate. I love a good bowl of soup and a delicious mug of hot chocolate. But the only time I want them is when the weather is cold, I have no desire for hot soup when the weather is hot.

This soup is so simple and easy. Perfect for those cold days when you you do not want to spend a lot of time in the kitchen.

Simple Italian White Bean and Pasta Soup

Ingredients:
  • 24 ounces marinara sauce
  • 32 ounces low sodium chicken broth
  • 2- 15 ounce cans reduced sodium cannellini beans, drained and rinsed
  • 6 lasagna noodles, uncooked
  • 3 cups (2 1/2 ounces) baby spinach
Directions:
  1. In a crock pot stir together the marinara sauce, chicken broth, beans and spinach. Cover and cook on low 6-8 hours.
  2. Break the lasagna noodles into pieces and stir into the crock pot. Cover and cook for 30 minutes or until the noodles are tender.
