Jalapeño Popper Chicken Salad: Savory Sweet and Satisfying

Chicken salad is not a meal I really think about. When I am meal planning and looking for lunch options sometimes I feel like a certain meal, like a soup or pasta salad, or sandwich. But never have I felt like chicken salad. It is not like I do not like chicken salad, but it is not a meal that I would ever just feel like making. That is until I came across a recipe for Jalapeño Popper Chicken Salad. If you have been following my blog for awhile, then you know I have a love of all things inspired by the jalapeño popper. 

Jalapeño Popper Chicken Salad: Savory Sweet and Satisfying

This chicken salad is creamy and packed with jalapeños, both pickled and fresh. Plus it has cheddar cheese and bacon. A perfect salad for those who like spicy foods. You could serve this salad on a bagel, like I did, or on your favorite bread. You could also serve it in a tortilla and make it a wrap. Heck it is so good, you could eat it on crackers.

Jalapeño Popper Chicken Salad

Ingredients:

  • 4 ounces cream cheese, softened
  • 3/4 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 3 cups shredded cooked chicken
  • 1/3 cup finely chopped red onion
  • 1/4 cup chopped pickled jalapeños
  • 1 tablespoon juice from the jar of pickled jalapeños
  • 1/4 teaspoon ground black pepper
  • 1 jalapeño, chopped
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese

Directions:

  1. In a large bowl combine the cream cheese, mayonnaise and garlic powder until smooth. Add in the remaining ingredients and stir until well combined. Cover and refrigerate at least 1 hour before serving.

Notes:
I used low sodium turkey bacon.
