I saw a picture the other day that was a breakfast sandwich made with pancakes. That reminded me of the McGriddle and I realized that I could create a homemade version of the McGriddle.
I choose a maple pancake as the base of the sandwich and then added an egg, cheese and some bacon. Instead of the bacon you could use a sausage patty or you could even do both sausage and bacon. Also you can use any type of cheese slice you like.
Homemade McGriddle
Ingredients
- 1 1/2 cups all purpose flour
- 3 1/2 teaspoons baking powder
- 1 1/4 cups milk
- 1 egg
- 1/4 cup maple syrup
- 1/2 cup applesauce
- 6 eggs
- 6 slices bacon, cooked and broken in half
- 6 slices cheese

Directions:
- In a medium bowl whisk together the flour and baking soda.
- In another bowl whisk together the milk and egg. Gently whisk in the maple syrup and applesauce. Pour the wet ingredients into the dry and whisk just until everything is combined, do not over mix.
- Allow the batter to rest and heat a griddle over medium-high heat. Once the griddle is preheated, lightly spray with cooking spray and scoop 1/4 cup of the batter onto the griddle. Cook for 3-6 minutes or until golden brown. Carefully flip and cook on the other side for 3-6 minutes or until golden brown.
- Heat a non stick skillet over medium heat. Once heated spray with cooking spray and gently crack in the eggs, cooking in batches if needed. Cook the eggs to your liking, I left the yolks runny on my eggs.
- Place each egg on a pancake and immediately top with a slice of cheese, then two halves of bacon and top with another pancake.
Notes:
I got 13 pancakes out of this pancake recipe, so that will make 6 sandwiches with 1 pancake left over. If you do not need 6 sandwiches you can always make the amount of sandwiches you need and serve the pancakes by themselves.
I used low sodium turkey bacon.
