I love the taste of arugula, the peppery flavor is so delicious and adds such a nice touch to a turkey and cheese sandwich. The Sriracha mayonnaise pairs well with arugula and adds a bit of spiciness to the sandwich.
Turkey, Provolone and Arugula Sandwich with Sriracha Mayonnaise
Ingredients:
- 2 tablespoons mayonnaise
- 1 teaspoon Sriracha
- splash lime juice
- 2 slices whole wheat bread
- 2 ounces sliced turkey breast
- 2 slices provolone cheese
- 1 or 2 handfuls arugula
Directions:
- In a small bowl combine the mayonnaise, Sriracha and lime juice until well mixed.
- Spread the Sriracha mayonnaise on both slices of bread. Top one slice of bread with turkey, then the cheese and then the arugula. Place remaining slice of bread on top.
- Heat a skillet over medium heat and then add the sandwich. Cook on both sides until lightly browned.
