Turkey, Provolone and Arugula Sandwich with Sriracha Mayonnaise: Savory Sweet and Satisfying

I love the taste of arugula, the peppery flavor is so delicious and adds such a nice touch to a turkey and cheese sandwich. The Sriracha mayonnaise pairs well with arugula and adds a bit of spiciness to the sandwich.

Turkey, Provolone and Arugula Sandwich with Sriracha Mayonnaise

Ingredients:

  • 2 tablespoons mayonnaise
  • 1 teaspoon Sriracha
  • splash lime juice
  • 2 slices whole wheat bread
  • 2 ounces sliced turkey breast
  • 2 slices provolone cheese
  • 1 or 2 handfuls arugula

Directions:

  1. In a small bowl combine the mayonnaise, Sriracha and lime juice until well mixed.
  2. Spread the Sriracha mayonnaise on both slices of bread. Top one slice of bread with turkey, then the cheese and then the arugula. Place remaining slice of bread on top.
  3. Heat a skillet over medium heat and then add the sandwich. Cook on both sides until lightly browned.
