Any time I have ever had a macaroni salad, they are very similar. There was never anything special about them. But that is not the case with this macaroni salad. It is full of fresh jalapeños for a nice crunch and great spiciness. It also has yummy bacon and cubes of cheese. A delicious and spicy macaroni salad perfect for the warm summer months.
Jalapeño Popper Macaroni Salad
Ingredients:
- 16 ounces elbow macaroni pasta
- 1 cup diced jalapeños
- 4 ounces cheddar cheese, cubed
- 10 slices bacon, cooked and crumbled
- 1 cup mayonnaise
- 1 cup sour cream
- 4 ounces cream cheese, room temperature
- 2 tablespoons lemon juice
- 1 teaspoon garlic powder
- black pepper, to taste
Directions:
- Cook the pasta according to the package directions. Drain and rinse with cold water until the pasta has cooled.
- In a small bowl, whisk together the mayonnaise, sour cream, cream cheese, lemon juice, garlic powder and black pepper, until well combined and smooth.
- In a large bowl, add the cooled pasta, jalapeños, cubed cheese and bacon. Pour the dressing over top and mix everything together.
- Cover the bowl and refrigerate for at least 30 minutes.
