This recipe is pretty simple to make and comes together fairly quickly. Plus it tastes really good. A sweet sauce with a little bit of spiciness and lemon flavor.
Honey Lemon Chicken Broccoli Bowl
Ingredients:
- 1 cup brown rice
- 12 ounces broccoli florets
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breasts, cut into 1 inch pieces
- black pepper, to taste
- 1/2 cup low sodium chicken broth
- 1/4 cup pineapple juice
- 1 lemon, juiced
- 1/4 cup honey
- 1 tablespoon reduced sodium soy sauce
- 1 tablespoon apple cider vinegar
- 1/4 teaspoon ground ginger
- 3 cloves garlic, minced
- 1 tablespoon cornstarch
- 1 teaspoon Sriracha
Directions:
- In a medium saucepan cook the rice according to the package directions.
- Place the broccoli into a steamer or colander set over a pan of boiling water. Cover the pan and steam the broccoli until cooked through and bright green, about 4-5 minutes.
- Heat the olive oil in a large skillet over medium high heat. Season the chicken with black pepper and add to the skillet. Cook until the chicken is completely cooked and golden, about 3-5 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet the chicken was cooked in, add in the chicken broth, pineapple juice, lemon juice, honey, soy sauce, vinegar, ginger, garlic, cornstarch and Sriracha. Bring the mixture to a boil, stirring constantly. Reduce the heat to a simmer and continue to stir constantly until the mixture has thickened slightly, about 3-5 minutes. Remove from the heat, add in the chicken and stir until well coated.
- Divide the rice evenly between 3 bowls and top with the broccoli and the chicken and sauce.
