A grilled cheese sandwich stuffed with eggs and sausage makes for a delicious breakfast. Although you could also eat it for lunch if you wanted, it is after all a sandwich.
Egg and Sausage Grilled Cheese
Ingredients:
- 1/2 pound breakfast sausage
- 6 eggs
- 1/4 cup milk
- black pepper, to taste
- 8 slices wheat bread
- 8 slices cheddar cheese
Directions:
- Heat a non stick skillet to medium-high heat. Add in the sausage and cook completely, crumbling it as it cooks. Transfer the sausage to a large bowl and rinse out and dry the skillet.
- In a medium bowl whisk together the eggs and the milk. Season with black pepper.
- In the skillet, over medium heat, pour in the egg mixture. As the eggs begin to set, gently pull them across the pan with a spatula, to form large chunks. Continue to pull and fold the eggs as they cook until there is not visible liquid remaining and the eggs have thickened. Gently stir the eggs into the cooked sausage.
- Rinse out and dry the skillet. Heat the skillet over medium-low heat.
- Place 1 slice of cheese on four bread slices. Divide the egg and sausage mixture between the four slices of bread and place on the cheese. Top with another piece of cheese and then a bread slice.
- Carefully place the sandwiches into the preheat skillet and cook until the bread is golden brown or toasted to your liking. Carefully flip the the sandwich over and cook on the other side until golden brown and the cheese has melted.
