This french toast is for anyone who loves coconut. The french toast slices are filled with a cream cheese and coconut filling, coated in flakes coconut and then cooked until toasted.
Coconut Crusted Stuffed French Toast
Ingredients:
- 2 tablespoon sweetened condensed milk
- 1/2 teaspoon coconut extract
- 6- 1 inch slices French bread
- 2 eggs
- 1/2 teaspoon vanilla extract
- 1 tablespoon granulated sugar
- 4 ounces cream cheese, softened
- 1 1/2 cups coconut flakes
Directions:
- In a small bowl combine the sweetened condensed milk and coconut extract.
- On the flat edge of the bread slices, cut through the middle but not going all the way through.
- In a shallow wide bowl, whisk together the eggs, vanilla, sugar and 1 tablespoon of the sweetened condensed milk mixture.
- In another shallow wide bowl place the coconut flakes.
- In a small bowl, mix together the cream cheese and the remaining sweetened condensed milk mixture.
- Carefully spread the cream cheese mixture in the middle of the bread slices, you do not want the bread to rip and the filling to come out when cooking.
- Dip the bread slices into the egg mixture, coating both sides. Then place the bread slices into the coconut flakes and coat both sides, pressing lightly to help the flakes stick.
- Cook the french toast on a preheated griddle for about 3-5 minutes per side. If the coconut is toasting too fast lower the heat.
