This side dish comes together quick and easy and is creamy with a subtle spice. If you would like a little more spice switch out the diced chilies for diced jalapeños. For an even quicker meal use white rice or even minute rice. I used brown rice because that is what I always have on hand and we enjoy the most.
Green Chile Rice
Ingredients:
- 4 cups cooked rice
- 2 cups shredded mozzarella cheese
- 2 cups light sour cream
- 4 ounces diced chilies
Directions:
- Preheat the oven to 400º F. Lightly spray an 8x8 baking dish with cooking spray.
- In a large bowl combine all of the ingredients and mix well. Transfer the rice mixture to the prepared baking dish and smooth into an even layer.
- Bake for 20 minutes or until heated through and starting to bubble.
Notes:
4 cups cooked rice is approximately 1 1/3 cups uncooked rice.
