It's pretty common knowledge that you eat with your eyes first, meaning you judge a dish based on how it looks. This is true when looking at recipes online. I see a picture of a dish, then look at the title and decide if I want to see the recipe. After looking at the recipe I then decide if I want to save to make or move on to the next recipe.
Usually the picture and recipe give me a good idea of how the recipe will turn out and taste. However with this soup I was so surprised at how good it tasted. It was absolutely delicious. In my notes on the recipe I actual had delicious capitalized with three exclamation points after it to remind me just how incredibly delicious it was.
Creamy Italian Tomato Soup
Ingredients:
- 1 pound Italian sausage
- 1/2 cup diced yellow onion
- 1 cup diced green pepper
- 28 ounce can crushed tomatoes
- 4 cups low sodium chicken broth
- 2 cups water
- 2 tablespoons dried basil
- 8 ounces uncooked rotini pasta
- 1/2 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1/2 cup shredded Italian cheese
- black pepper, to taste
Directions:
- In a large pot add the sausage (remove casings if needed) and cook until crumbled and completely cooked. Drain any extra grease.
- Stir in the onions and peppers and cook for 1-2 minutes or until the veggies start to soften.
- Pour in the tomato sauce, broth, water and basil. Bring the mixture to a boil and add in the pasta. Bring the mixture back to a boil and reduce the heat and allow pasta to cook per package directions at a low boil.
- Add in the heavy cream and both cheeses and stir until the cheeses have completely melted and fully incorporated. Season with black pepper.
