This spicy and delicious soup starts out as a thick and creamy potato soup. Then some carrots and jalapeños are added, plus lots of delicious cheese. The end result is a creamy, cheesy and spicy soup.
Crock Pot Jalapeño Cheddar Cheese Soup
Ingredients:
- 2 tablespoons unsalted butter
- 1 yellow onion, chopped
- 2 carrots, peeled and chopped (about 1 cup)
- 2 jalapeños, seeded and diced
- 1 teaspoon minced garlic
- 1/8 teaspoon cayenne pepper
- 1/4 cup all purpose flour
- 1 cup milk
- 4 cups low sodium vegetable broth
- 3 small Yukon gold potatoes, peeled and chopped
- 2 cups shredded sharp cheddar cheese
- fresh jalapeño slices
- shredded cheddar cheese

Directions:
- In a large pot, over medium heat, melt the butter. Add in the onions, carrots and jalapeños. Sauté until the vegetables just begin to soften, about 5 minutes.
- Add in the garlic and cayenne pepper and cook until the garlic is fragrant, about 1-2 minutes.
- Sprinkle the flour over top and cook for 1 minute or until lightly golden, stirring constantly.
- Slowly stir in the milk and cook until the mixture thickens, about 2 minutes, stirring constantly.
- Transfer the mixture to a crock pot.
- Slowly stir in the chicken broth and then add in the potatoes.
- Cover the crock pot and cook on low for 5-6 hours or until the vegetables are tender.
- Use an immersion blender to puree the soup until smooth or transfer the soup in batches to a blender to puree until smooth (return the soup to the crock pot).
- Add the cheese, 1/2 cup at a time, to the soup in the crock pot, stirring until completely melted before adding more.
- Serve the soup and add any garnishes if desired.
Notes:
Russet potatoes may be substituted for the Yukon gold.
