My youngest daughter request cheesy broccoli for dinner one night. It turns out that I have not made a simple broccoli and cheese recipe. So after looking at several recipe, I choose one and tweaked it a little bit.
The results were delicious! The daughter that requested it approved and said I could make it again. Which is a pretty big compliment considering she would be very happy with the microwaveable cheesy broccoli.
Cheesy Broccoli Bake
Ingredients
- 7 cups broccoli florets, about 3 broccoli crown
- 1/4 cup cornstarch
- 1/4 teaspoon ground black pepper
- 2 2/3 cups milk
- 2 cups shredded sharp cheddar cheese
- 2-4 tablespoons grated Parmesan cheese
Cooking Directions
- Preheat the oven to 350º F. Spray a 9x13 baking dish with cooking spray and set aside.
- In a large pot, add 1 inch of water and bring it to a boil. Carefully add in a steamer basket and then all of the broccoli florets. Cover the pot, reduce the heat to a simmer and cook for 3-5 minutes or until the broccoli is bright green and crisp.
- Meanwhile, in a large pot, one big enough to hold all of the broccoli, combine the cornstarch and black pepper. Slowly whisk in the milk. Bring the mixture to a boil over medium heat, whisking constantly.
- Once it reaches a boil, cook and whisk for 1 minute, or until the mixture has thickened. Add in the cheddar cheese and stir until completely melted.
- When the broccoli has finished cooking drain it and add it to the cheese sauce when the sauce is ready. Stir well to coat the broccoli in cheese sauce.
- Transfer the cheesy broccoli to the prepared baking dish and sprinkle with desired amount of parmesan cheese on top.
- Cover and bake for 20-30 minutes or until broccoli is cooked to your liking.
