Kicked up Tater Tot Casserole: Savory Sweet and Satisfying

This tater tot casserole is by far the most detailed one I have made. Plus it has the longest list of ingredients out of all the tater tot casseroles I have made. When you look at the ingredient list you would think this casserole would be spicy. But it is not spicy at all just very flavorful. 

Kicked Up Tater Tot Casserole

Ingredients:

  • 1 1/4 pounds ground turkey
  • 1/4 teaspoon black pepper
  • 6 tablespoons unsalted butter, divided
  • 1 cup diced yellow onion
  • 1 cup diced red bell pepper, reserving 2 tablespoons for garnish
  • 1 cup diced poblano pepper, reserving 2 tablespoons for garnish
  • 8 ounces white mushrooms, chopped
  • 1 jalapeño pepper, finely diced
  • 4 large garlic cloves, minced
  • 1/3 cup all purpose flour
  • 2 teaspoons reduced sodium soy sauce
  • 1 teaspoon or more hot sauce
  • 1 teaspoon Worcestershire sauce
  • 2 cups half and half
  • 1/4 cup light sour cream
  • 2 cups frozen corn
  • 8 ounces cheddar cheese, cut into 1/2 inch cubes
  • 4 ounces pepper jack cheese, cut into 1/2 inch cubes
  • 2 pounds frozen tater tots

Directions:

  1. Preheat oven to 350º F. Lightly grease a 9x13 baking dish.
  2. In a large skillet add the ground turkey and season with black pepper.
  3. Cook over medium high heat until completely cooked and crumbled. Transfer the ground turkey to large bowl or plate and set aside.
  4. Add 2 tablespoon butter to the skillet and melt.
  5. Once the butter has melted add in the onion, red pepper, poblano pepper, mushrooms, jalapeño and garlic.
  6. Cook over medium heat, stirring occasionally, until the onions are translucent and the mushrooms are softened, about 5-10 minutes.
  7. Add the remaining 4 tablespoons of butter to the skillet and allow to melt stirring occasionally.
  8. Once the butter has melted sprinkle the flour over top. Stir well to mix in the flour and continue to cook for 1-2 minutes or until the flour has started to brown, stirring constantly.
  9. Add in the soy sauce, hot sauce and Worcestershire sauce. Stir constantly and cook for 1 minute.
  10. Slowly pour in the milk, while stirring constantly. Once the milk is fully incorporated add in the cooked ground turkey. Cook, stirring often, until the mixture has thickened, about 5-10 minutes.
  11. Stir in the sour cream, corn and half of both cheeses. Season with additional black pepper if needed.
  12. Transfer the mixture to the prepared baking dish and spread into an even layer.
  13. Top with the frozen tater tots and bake for 35 minutes.
  14. Top with the remaining cheeses and bake for an additional 10 minutes.
  15. Remove from the oven and top with the reserved diced bell pepper and poblano pepper.
  16. Top with jalapeño slices if desired.
