I am almost always in the mood for a good salad. Especially with some of these super hot and humid days that we have been having. For me this made a great lunch. It was filling, delicious and I did not feel guilty about having seconds. This salad would also make a great vegetable for dinner.
Spinach Salad with Warm Bacon Dressing
Ingredients:
- 12 ounces bacon
- 2 tablespoons olive oil
- 1/3 cup red wine vinegar
- 1 tablespoon dijon mustard
- 1 tablespoon honey
- fresh ground black pepper, to taste
- 10 ounces spinach
- 8 ounces white mushrooms, sliced
- 1/2 small red onion, thinly sliced and run under cold water to remove hash bite
- 1 cup cubed swiss cheese
- 5 hard boiled eggs, sliced
- 2 1/2 cups croutons, any flavor
Directions:
- In a skillet cook the bacon until crispy. Set aside to cool.
- Reserve 3 tablespoons of the bacon drippings and discard the rest.
- To the bacon drippings add the olive oil, red wine vinegar, dijon and honey. Whisk together and season with black pepper.
- Over medium heat, bring the mixture to a simmer and simmer for one minute, whisking occasionally.
- Remove from the heat and crumble 2 strips of bacon into the mixture. Stir together and set aside to cool slightly.
- Crumble the remaining bacon slices.
- In a large bowl gently toss together the spinach, crumbled bacon, mushrooms, onion slices, and swiss cheese.
- Drizzle with the warm bacon dressing and gently toss to combine. Top with the sliced hard boiled eggs and croutons.
