Even though it is May the weather where I live is still not as warm as I would like. We still have plenty of chilly days where a nice warm mug of hot chocolate sounds wonderful.
Even though it is still chilly, strawberries have been showing up in the grocery store at a reasonable price that I am willing to pay. So it only made sense to use them in a hot chocolate. The combination of white chocolate and strawberries in a hot chocolate is delicious, perfect for these chilly May days.
Strawberry White Hot Chocolate
Ingredients:
- 12 ounces strawberries (fresh or defrosted frozen)
- 1/2 cup granulated sugar
- 3 cups milk
- 6 ounces good quality white chocolate, finely chopped
- 1 teaspoon vanilla extract
- whipped cream, optional (not included in the nutritional info)
Directions:
- Place the strawberries in a large bowl and sprinkle the sugar over top. Toss to coat the strawberries in the sugar and set aside for about 10 minutes or until the strawberries start to release their juices.
- Transfer the strawberries to a blender and puree until smooth. Pour through a mesh sieve to remove the seeds. Discard the seeds and set the strawberry puree aside, you should have at least 3/4 cup puree.
- Pour the milk into a medium saucepan and heat over low heat until the milk begins to simmer, stirring constantly. As soon as bubbles begin to appear around the edges of the milk remove from the heat.
- Immediately add in the white chocolate and stir until completely melted and incorporated.
- Add in the strawberry puree and vanilla extract, stirring to combine.
- Pour into mugs and top with whipped cream it desired.
