I am always on the look out for delicious yet easy vegetable side dishes. This one fit perfectly into that category, delicious yet easy. If I had not told my family I was counting on leftovers for another meal I really think they would have eaten all of it. That is how much they loved it.
For this creamed corn you can substitute the frozen corn for canned or even fresh. Whatever works best for you. I always have some frozen corn in the freezer so that is what I used that.
Ingredients:
- 8 ounces cream cheese
- 1/4 cup unsalted butter
- 4 cloves garlic, minced
- 1/2 cup milk
- 3/4 teaspoon dried thyme
- black pepper, to taste
- 1 1/2 cups shredded cheddar cheese
- 16 ounces frozen corn
Directions:
- Preheat oven to 375º F. Lightly spray a baking dish with cooking spray.
- In a medium saucepan add in the cream cheese, butter, garlic and milk. Heat over medium high heat, stirring occasionally, until cheese and butter is melted and everything is well combined, about 2 minutes.
- Add in the frozen corn and stir until well mixed, about 2 minutes. Stir in the thyme and black pepper.
- Transfer the corn mixture to the prepared baking dish and sprinkle with the shredded cheese.
- Bake for 15-17 or until heated through and bubbly.
